Beer is one of the oldest drinks humans have produced, dating back to at least the 5th millennium BC in Iran, and was recorded in the written history of ancient Egypt and Mesopotamia and spread throughout the world. As almost any cereal containing certain sugars can undergo spontaneous fermentation due to wild yeasts in the air, it is possible that beer-like drinks were independently developed throughout the world soon after a tribe or culture had domesticated cereal.

Publican, Brewery and Licensed Victuallers Records (Occupations). Records of those who applied for an annual victualler’s licence, issued to an individual who intended to serve food and alcoholic beverages in a public house. From 1522, a person wanting to sell alcoholic drinks had to apply for a licence from the Quarter or Petty Sessions and it is from the records of these courts that the majority of publican records originate. From the 17th century breweries often bought pubs and tied them into only selling their beer.

It discusses first the discovery and use of beer in ancient history, and the functioning of monasteries as centres of the beer economy in the early Middle Ages. It then presents an analysis of the innovation and taxation in brewing in the Middle Ages which triggered the decline of monasteries and growth of commercial breweries in Early Modern Times.

Brewing has been a human activity ever since the beginning of urbanization and civilization in the Neolithic period. Beer is a product valued by its physico-chemical properties (. quality) as much as by its entanglement with religious, culinary and ethnic distinctiveness (. Accordingly, the history of beer brewing is not only one of scientic and technological advancement, but also the tale of people themselves: their governance, their economy, their rites and their daily life. It encompasses grain markets as well as alchemy. There exists a vast literature on beer and brewing.

1632 – The first commercial brewery in the US opens in Manhattan run by the Dutch West India company. 1833 – William Lill and Company establish the first commercial brewery in Chicago. It produces 600 barrels of ale in its first year of production. The Dutch controlled New Amsterdam at the time. 1639 – Commercial breweries begin popping up in New Hampshire, Rhode Island, Pennsylvania and other colonies. 1754 – George Washington, who for a time operated the largest distillery in the US, enters a beer recipe in his journal. 1774 – Robert Smith opens a brewery in Philadelphia.
