I recently took a Food Safety Manager Certification course at the suggestion of a friend who said I could find lots of work with caterers if I had this certification. So I signed up for the course at my city's Department of Health. The course was only one 8-hour day, so the information was presented at a very fast pace; some of it was just touched on. I passed the test and received my certificate, but there's so much more I need to know before I can a actively seek work using the certification, so I sought a source that would fill in the blanks. I wanted a book of my own, so I turned to Amazon. It didn't take me long to find this book and after browsing through all the available info, I bought it. I figured it would be just what I was looking for and I was absolutely right. Some of the information you need to understand in this field can be a bit complex, but this book presents everything and then some in a very in-depth, easy-to-understand, well-organized manner. I'm certain that in it I have everything I need to pursue the kind of work I'm looking for. I'd highly recommend this book to anyone who is preparing to take the course because there's no way you're going to get all the info you'll need in just a day or two. Then too, the teacher only has so much time to answer questions, so if there's something you need additional help with, you'll really appreciate having a resource like this at hand.

The book was useful but extremely out dated. With all of the new rules and regulations and certifications needed one may do better purchasing a newer more recent publication. Also Book was to ship with card package, card package was not present in shipment.

I am using your textbook for a class I teach for the Oklahoma City/County Health Department. I Love It! The class I teach is the Food Service Operator's Certification Course that is required by all food service operators in this county. I am a Registered Dietitian who is contracted by Oklahoma State University-OKC and Francis Tuttle to teach the class for the health department. It is kind of a community service offered by the two schools. I have only been teaching the class for three years now, and by far your book is the best.
Your book has made my job so easy and so much fun! Some of my students are returning to do the re-certification class and bringing managers in who have not taken the class in 20 years. In the past, they have just challenged the test every three years, because they thought the class was too boring. (and they knew it all).
I would highly recommend this book to educators in the nutrition field. I think all nutrition majors need to know this important information. I also recommend it for a reference for my food service managers in my nursing homes and assisted living facilities.
